  • 2 tablespoons fresh lemon juice
  • 1/2 cup milk
  • 1 cup fresh or frozen blueberries

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In an electric mixer bowl, combine melted butter, sugar, eggs, vanilla extract, lemon zest, and lemon juice; mix until well combined.
  4. Gradually add the dry mixture and milk in two batches; mix until just combined.
  5. Toss blueberries in one tablespoon of flour; gently fold into the batter.
  6. Pour the batter into a greased loaf pan and bake for 55-65 minutes or until a toothpick comes out clean.
  7. Allow to cool for about 30 minutes before transferring to a wire rack.
