  • 1/2 cup dried cranberries
  • 1/2 cup walnuts, coarsely chopped

  • 2 tbsp. lemon juice
  • Zest from one lemon
  • 1/4 cup olive oil
  • 1/4 cup apple cider vinegar
  • 1 tbsp. honey
  • 1/4 tsp. sea salt
  • 1/4 tsp. freshly ground pepper

Instructions

  1. Remove tough stems from kale leaves and chop them into bite-sized pieces.
  2. Rinse the kale thoroughly and dry it using a salad spinner or paper towels.
  3. Massage the chopped kale with olive oil until tender.
  4. Add cranberries, walnuts, grated lemon zest, and feta to the bowl without stirring yet.
  5. For the dressing, combine olive oil, lemon juice, apple cider vinegar, honey, sea salt, and pepper in a mason jar. Shake until emulsified.
