  • 2 pounds Ground Chicken (or ground turkey or lean beef)
  • 1 cup Parmesan Cheese (shredded)
  • 1 cup Panko Breadcrumbs (or regular breadcrumbs)
  • 2 large Eggs
  • 4 cloves Minced Garlic
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Dried Basil
  • 1 teaspoon Dried Parsley
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1/2 cup Whole Milk (or plant milk)
  • 2 tablespoons Unsalted Butter (for glaze)
  • 1/4 cup Additional Parmesan (for sprinkling)
  • 2 tablespoons Fresh Parsley (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine ground chicken, shredded Parmesan cheese, breadcrumbs, eggs, minced garlic, garlic powder, onion powder, dried basil, dried parsley, salt, black pepper, and milk. Mix until just combined.
  3. Transfer the mixture to a loaf pan or shape it into a loaf on a lined baking sheet without packing it tightly.
  4. Brush melted unsalted butter mixed with additional Parmesan over the top of the meatloaf.
  5. Bake for about 45 minutes or until it reaches an internal temperature of 165°F (75°C). Let rest for about 10 minutes before slicing.
