  • 1.5 cups breadcrumbs (preferably plain Italian-style)
  • 1.5 cup grated Pecorino Romano cheese
  • 0.25 cup chopped fresh parsley
  • 3 cloves garlic (minced)
  • 0.5 cup extra-virgin olive oil
  • Salt and black pepper to taste
  • Lemon wedges for serving

Instructions

  1. Prepare the artichokes by trimming stems and removing tough leaves. Cut off the top third to create space for stuffing.
  2. In a bowl, mix breadcrumbs, Pecorino Romano cheese, parsley, garlic, salt, and pepper. Drizzle in olive oil until mixture is slightly moist.
