  • 1 cup heavy cream
  • 2 tablespoons Dijon mustard
  • 1/2 cup chicken broth
  • 2 tablespoons olive oil
  • Salt and black pepper, to taste
  • 2 cloves garlic, minced
  • 1 medium onion, finely chopped
  • 2 tablespoons butter
  • 1 tablespoon fresh parsley, chopped (for garnish)
  • 1 tablespoon chives, chopped (for garnish)

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. Heat olive oil in a skillet over medium-high heat. Sear the chicken for 6-7 minutes on each side until golden brown and cooked through. Remove from skillet.
  3. In the same skillet, melt butter then sauté chopped onions and minced garlic until fragrant.
  4. Pour in barley tea and allow it to reduce slightly.
  5. Add heavy cream, Dijon mustard, and chicken broth; simmer until thickened.
  6. Return the chicken to the skillet, spoon sauce over it, and simmer for an additional 5 minutes.
  7. Garnish with fresh parsley and chives before serving.
