  • ¾ cup full-fat plain yogurt
  • 2 cloves garlic (minced)
  • 1 tablespoon lemon juice
  • 1 tablespoon grated fresh ginger
  • 1 tablespoon Garam Masala
  • 1 teaspoon ground turmeric
  • ½ teaspoon ground cumin
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • ¼ teaspoon ground cayenne pepper
  • pounds boneless, skinless chicken thighs (cut into pieces)
  • 3 tablespoons unsalted butter
  • 8 ounces tomato sauce
  • 1 cup heavy cream
  • 1 tablespoon tomato paste
  • ½ tablespoon granulated sugar
  • Fresh cilantro (for garnish)

Instructions

  1. Marinate the chicken: In a large Ziplock bag, combine yogurt, garlic, lemon juice, ginger, Garam Masala, turmeric, salt, pepper, and cayenne. Add the chicken and massage to coat thoroughly. Seal and refrigerate for at least 3 hours or overnight.
  2. Cook the chicken: In a skillet over medium-high heat, melt butter. Cook marinated chicken in batches until golden brown (about 2-4 minutes per side).
  3. Prepare the sauce: Add tomato sauce, heavy cream, tomato paste, and sugar to the skillet with browned chicken. Stir well and simmer on medium-low for about 20 minutes.
  4. Serve hot: Adjust seasonings as desired and garnish with fresh cilantro.
