  • 1 Tbsp high-heat cooking oil (avocado or grapeseed)
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 tsp chili powder
  • 3/4 cup black beans
  • 3/4 cup shredded cheddar or Mexican-blend cheese
  • 1/2 cup salsa
  • 1/2 avocado, diced
  • Optional toppings: sliced jalapeños, green onions, chopped cilantro, corn

Instructions

  1. Preheat oven to 425°F (220°C). Wash and peel the sweet potatoes, leaving some skin on for texture. Slice into 1/8-inch thick rounds.
  2. Line a baking sheet with parchment paper and arrange sweet potato rounds in a single layer. Drizzle with cooking oil and sprinkle with garlic powder, salt, and chili powder. Toss to coat evenly.
  3. Bake for 20 minutes, flipping halfway through until golden brown and crispy.
  4. While baking, rinse black beans. Once sweet potatoes are done, sprinkle black beans and cheese over them. Return to the oven for another few minutes until cheese melts.
  5. Top with salsa, avocado, and any additional toppings you desire.
