Ingredients

Scale
  • 45 pounds boneless skinless chicken thighs
  • ½ cup packed light brown sugar
  • ½ cup ketchup
  • ½ cup light soy sauce
  • ½ cup pineapple juice
  • 1 tablespoon ginger paste (or minced ginger)
  • 1 tablespoon garlic paste (or minced garlic)

Instructions

  1. Marinate the Chicken: Combine marinade ingredients in a bowl or bag, reserving half a cup for later. Coat chicken thoroughly and refrigerate for at least four hours or overnight.
  2. Preheat the Grill: Heat grill to medium-high (400°F). Brush grates with oil.
  3. Grill the Chicken: Place chicken on the grill without moving for about ten minutes to develop grill marks. Flip and cook until internal temperature reaches 165°F, about another ten minutes.
