  • 1 1/2 lb chicken breast or thighs (cut into 1-inch pieces)
  • 1 teaspoon chicken bouillon powder
  • 1/2 teaspoon white pepper
  • 1 tablespoon water
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1/2 cup cornstarch
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 cup water
  • 2 teaspoons vegetable oil
  • 3 tablespoons light soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons ketchup
  • 1/4 cup honey
  • 3 tablespoons brown sugar
  • 3 tablespoons water
  • 4 cloves garlic (minced)
  • 1 tablespoon sesame oil
  • 2 teaspoons corn starch mixed with 3 tablespoons water
  • Green onion (sliced)
  • Toasted sesame seeds

Instructions

  1. Marinate chicken pieces with chicken bouillon powder, white pepper, and water for at least 10 minutes.
  2. In a bowl, mix light soy sauce, rice vinegar, honey, minced garlic, and brown sugar to create the sauce.
  3. Prepare the batter by whisking eggs, flour, cornstarch, baking powder, salt, water, and vegetable oil until smooth.
  4. Heat vegetable oil in a wok or pot to around 365°F. Dip marinated chicken into the batter and fry until golden brown (about 3 minutes).
  5. Increase oil temperature to 375°F for double frying each batch for extra crispiness (about 2 minutes).
  6. Sauté minced garlic in a clean wok before adding the sauce mixture to simmer.
  7. Mix in a cornstarch slurry until thickened and toss in the fried chicken until fully coated.
  8. Garnish with sliced green onions and toasted sesame seeds before serving.
