  • 1.5 pounds boneless, skinless chicken breasts
  • 1/4 cup honey
  • 2 tablespoons chipotle in adobo sauce (minced)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cooked rice (white or brown)
  • 1 can black beans (15 oz), rinsed and drained
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 avocado, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup cilantro, chopped
  • Lime wedges for serving

Instructions

  1. In a medium bowl, whisk together honey, chipotle in adobo sauce, olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper.
  2. Place chicken in a resealable bag or dish; pour marinade over it. Seal or cover and refrigerate for at least 30 minutes (preferably 1-2 hours).
  3. Preheat grill to medium-high heat. Grill chicken for about 6-7 minutes on each side until cooked through (165°F / 74°C). Let rest for 5 minutes before slicing.
  4. Assemble bowls: Start with rice as the base and layer with black beans, corn, sliced chicken, avocado, and cherry tomatoes.
  5. Garnish each bowl with cilantro and lime juice before serving.
