  • 2 cups warm water (105-115°F)
  • 1 Tablespoon active dry yeast
  • 1/4 cup honey or sugar
  • 2 teaspoons salt
  • 2 Tablespoons oil (canola or vegetable)
  • 45 1/2 cups all-purpose flour

Instructions

  1. In a large bowl or stand mixer, combine yeast, warm water, and a pinch of honey or sugar. Let sit for 5-10 minutes until foamy.
  2. Add remaining honey or sugar, salt, oil, and three cups of flour to the yeast mixture. Mix until combined.
  3. Gradually add more flour until the dough pulls away from the bowl sides but remains slightly sticky.
  4. Knead for about 4-5 minutes until smooth and elastic.
  5. Place dough in a greased bowl, cover it, and let it rise in a warm spot until doubled in size (about 1.5 hours).
  6. Prepare two greased 9×5" loaf pans.
  7. Punch down risen dough, divide into two portions, shape into logs, and place in pans.
  8. Cover again and let rise for another 45 minutes to an hour.
  9. Preheat oven to 350°F (175°C) and bake loaves for 30-33 minutes until golden brown.
  10. Cool on wire racks before slicing.
