  • 1 tbsp butter
  • 1 leek, sliced
  • 2 carrots, cut into large pieces
  • 2 stalks celery, diced
  • 2 cloves garlic, pressed
  • 2 tbsp flour
  • 4 cups chicken stock
  • 2 cups cooked turkey (or chicken)
  • 2 large potatoes, cut into chunks
  • 2 bay leaves
  • 1 tbsp fresh thyme leaves (or 1 tsp dried thyme)
  • Salt and pepper to taste
  • Optional: 1/3 cup heavy cream

Instructions

  1. In a large Dutch oven over medium heat, melt the butter.
  2. Add the sliced leek, carrots, celery, and thyme; sauté until softened.
  3. Incorporate the pressed garlic and cook for another minute.
  4. Stir in flour to thicken the mixture, then gradually add chicken stock while scraping the pot’s bottom.
  5. Season with salt and pepper; bring to a boil.
  6. Add potato chunks and cooked turkey; stir well.
  7. Cover and simmer at 350°F (180°C) in the oven for about 45 minutes until tender.
  8. For creaminess, stir in heavy cream just before serving.
