  • 1/2 cup mashed very ripe banana (1 medium)
  • 1 large egg
  • 2 tbsp melted butter or coconut oil
  • 1/4 cup plain Greek yogurt
  • 1/2 tsp vanilla extract
  • 3/4 cup white whole wheat flour (or all-purpose)
  • 1/2 tsp aluminum-free baking powder
  • 1/4 tsp baking soda
  • Pinch of salt (optional)
  • 1/2 cup chopped strawberries

Instructions

  1. Preheat your oven to 350°F. Line a mini muffin pan with paper liners or lightly spray silicone molds with oil.
  2. Mash the banana until smooth in a large bowl.
  3. Whisk in the egg, melted butter (or coconut oil), Greek yogurt, and vanilla extract until well combined.
  4. In another bowl, mix the flour, baking powder, baking soda, and salt. Gradually add this to the wet ingredients until just combined.
  5. Gently fold in the chopped strawberries.
  6. Fill each muffin cup about three-quarters full with batter.
  7. Bake for 11-15 minutes or until a toothpick comes out clean.
  8. Allow cooling in the pan for 5-10 minutes before transferring to a wire rack.
