- 1 large egg
- 2 tbsp melted butter or coconut oil
- 1/4 cup plain Greek yogurt
- 1/2 tsp vanilla extract
- 3/4 cup white whole wheat flour (or all-purpose)
- 1/2 tsp aluminum-free baking powder
- 1/4 tsp baking soda
- Pinch of salt (optional)
- 1/2 cup chopped strawberries
- Preheat your oven to 350°F. Line a mini muffin pan with paper liners or lightly spray silicone molds with oil.
- Mash the banana until smooth in a large bowl.
- Whisk in the egg, melted butter (or coconut oil), Greek yogurt, and vanilla extract until well combined.
- In another bowl, mix the flour, baking powder, baking soda, and salt. Gradually add this to the wet ingredients until just combined.
- Gently fold in the chopped strawberries.
