  • 105 grams whole grain spelt flour
  • 1 teaspoon sea salt
  • 1/2 cup milk of choice
  • 5 tablespoons unsalted butter, melted
  • 3 tablespoons white sugar
  • 1 large egg
  • 1 large egg yolk
  • 1/4 cup active sourdough starter
  • 6 ounces softened cream cheese
  • 1/4 cup white sugar
  • 1 1/2 teaspoons all-purpose flour
  • 1/4 teaspoon pure vanilla essence
  • A pinch of salt
  • 12 teaspoons fresh lemon juice
  • 1 tablespoon plus 1 teaspoon all-purpose flour
  • 1 tablespoon plus 1 teaspoon white sugar
  • 1/2 tablespoon unsalted butter, chilled and cut into pieces

Instructions

  1. Combine the einkorn flour, spelt flour, and salt in a bowl. In another bowl, mix melted butter, milk, sugar, egg, egg yolk, and sourdough starter.
  2. Pour the wet mixture into the dry ingredients and stir until a soft dough forms.
  3. Knead the dough on a floured surface until smooth (about 5 minutes), then let it rise in a greased bowl for about an hour until doubled in size.
  4. Prepare the filling by mixing cream cheese with sugar, vanilla essence, lemon juice, and flour until smooth.
  5. Punch down the risen dough and divide it into equal pieces; roll each piece into a circle and place filling in the center before folding edges over.
  6. Let the filled kolaches rise for another 30 minutes before baking at 350°F (175°C) for about 20 minutes or until golden brown.
