  • ¼ teaspoon nutmeg, freshly grated
  • Pinch cloves
  • 1 (15 ounce) can pumpkin puree
  • 1½ cups (175 grams) powdered sugar
  • 23 tablespoons (3045 grams) milk
  • 1 ½ teaspoons vanilla extract

Instructions

  1. Prepare the pastry by mixing flour, powdered sugar, cinnamon, and salt in a bowl. Cut in cold butter until crumbly. Add milk and egg yolks with vanilla; mix to form a dough. Chill for 30 minutes.
  2. Make the filling by combining brown sugar, cinnamon, nutmeg, cloves, and pumpkin puree in a bowl.
  3. Roll out the chilled dough to ¼ inch thick; cut into circles using a round cutter.
  4. Place filling on each circle; fold over and crimp edges to seal.
  5. Bake at 375°F (190°C) for about 25 minutes until golden brown.
  6. Prepare the glaze by mixing powdered sugar with milk and vanilla until smooth; drizzle over warm pasties.
