  • ¾ cup unsalted butter
  • 1 cup all-purpose flour
  • 2 ribs celery, chopped
  • 1 large yellow onion, chopped
  • 1 large green bell pepper, chopped
  • 10 cups beef broth
  • 14.5 ounces stewed tomatoes (canned)
  • 6 ounces tomato sauce (canned)
  • 3 pounds medium shrimp, peeled and deveined
  • Cooked white rice for serving

Instructions

  1. Prepare the roux by melting butter in a large pot over medium-low heat and whisking in flour until smooth. Cook for about 30-40 minutes until deep brown.
  2. Add chopped vegetables (celery, onion, bell pepper, garlic) to the pot and cook until tender.
  3. Gradually whisk in beef broth and bring to a boil.
  4. Stir in sausage, stewed tomatoes, tomato sauce, hot sauce, sugar, Cajun seasoning, thyme leaves, and bay leaves. Simmer uncovered for about 45 minutes.
  5. Add shrimp and Worcestershire sauce; continue to simmer for another 45-60 minutes before serving over cooked rice.
