  • 1/2 small yellow onion, peeled
  • 1 egg
  • 2 tablespoons plain Greek yogurt
  • 1/2 cup panko breadcrumbs
  • 1/2 cup freshly grated Parmesan cheese
  • 3 cloves garlic, minced
  • 2 tablespoons chopped fresh basil
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh rosemary
  • 1/2 teaspoon dried oregano
  • 1 teaspoon granulated beef bouillon or 1 crushed cube (optional)
  • 1/2 teaspoon EACH salt, pepper
  • 1 pound ground turkey (93% lean)
  • Olive oil for brushing or cooking spray

Instructions

  1. Finely chop the yellow onion and sauté in olive oil until translucent, about 5 minutes.
  2. In a large bowl, mix together the sautéed onion, ground turkey, egg, Greek yogurt, panko breadcrumbs, Parmesan cheese, garlic, herbs, salt, and pepper until just combined.
  3. Shape the mixture into uniform balls (1-1.5 inches) and place on a lined baking sheet.
  4. Cook in an oven preheated to 400°F (200°C) for about 20 minutes or until golden brown.
