2 cod fillets (about 6 oz each)
2 cups cherry tomatoes
1 tbsp olive oil
1 tsp smoked paprika
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp salt
1/4 tsp black pepper
1 tbsp fresh lemon juice
1 tsp fresh thyme, chopped
1 tbsp balsamic vinegar
1 clove garlic, minced
1/2 cup heavy cream
1/4 cup sour cream or Greek yogurt
1 tbsp Dijon mustard
1 tbsp fresh dill, chopped
1 tsp lemon zest
1 tbsp butter
Instructions
Preheat the oven to 400°F (200°C). Toss cherry tomatoes with olive oil, salt, black pepper, balsamic vinegar, and minced garlic. Spread on a baking sheet and roast for about 20 minutes.
Pat dry cod fillets and rub with olive oil. Season with smoked paprika, garlic powder, onion powder, salt, black pepper, and lemon juice.
Heat grill or grill pan over medium-high heat; cook cod for 3-4 minutes per side until golden and flaky.
In a saucepan over low heat, melt butter and stir in heavy cream, sour cream (or yogurt), Dijon mustard, dill, lemon zest, salt, and black pepper. Simmer gently for 2-3 minutes.
Serve roasted tomatoes topped with grilled cod and drizzle with creamy dill sauce.
