  • 2 cups chicken or vegetable broth
  • ½ cup olive oil
  • ½ cup lemon juice
  • 5 cloves garlic (minced)
  • 1 tbsp dried oregano
  • ½ tbsp paprika
  • 1 tbsp salt

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the potatoes into thick wedges or cubes.
  3. In a roasting pan, combine potatoes, broth, olive oil, lemon juice, garlic, oregano, paprika, and salt; toss well.
  4. Cover tightly with foil and roast for 40 minutes.
  5. Remove from the oven, toss again, cover, and continue roasting for another 25 minutes until fork-tender.
  6. Uncover and roast an additional 15 minutes until golden brown.
  7. Serve warm, drizzled with any remaining liquid.
