  • 1/2 teaspoon pure vanilla extract
  • 1/2 cup vegetable oil
  • 1/3 cup freshly squeezed grapefruit juice
  • 1/2 cup powdered sugar
  • 12 tablespoons freshly squeezed grapefruit juice

Instructions

  1. Preheat your oven to 350°F.
  2. In a small bowl, sift together flour, baking powder, and salt.
  3. In another bowl, whisk Greek yogurt, 1 cup sugar, eggs, grapefruit zest, and vanilla until smooth.
  4. Slowly combine dry ingredients into wet mixture; stir gently until just mixed.
  5. Fold in vegetable oil until incorporated.
  6. Pour batter into a prepared loaf pan and bake for about 50 minutes or until a toothpick comes out clean.
  7. While baking, prepare grapefruit syrup by heating remaining juice with the rest of the sugar until dissolved.
  8. Cool the cake for 10 minutes before pouring syrup over it to soak in fully.
  9. For the glaze, mix powdered sugar with enough grapefruit juice to achieve desired consistency and drizzle over the cooled cake.
