  • 1 1/4 cups sugar
  • 1 1/4 cups water
  • 1 teaspoon grated grapefruit zest
  • 2 cups freshly squeezed grapefruit juice
  • 2 tablespoons freshly squeezed lemon juice

Instructions

  1. In a medium saucepan over medium-high heat, combine sugar, water, and grapefruit zest. Bring to a boil while stirring until the sugar dissolves completely.
  2. Remove from heat and let cool for about 5 minutes. Stir in grapefruit juice and lemon juice. Strain the mixture through a fine-mesh sieve into a bowl to remove pulp.
  3. Cover and refrigerate until thoroughly chilled (at least 4 hours).
  4. Once chilled, churn the mixture in an ice cream maker according to manufacturer instructions until light and fluffy.
  5. Transfer to a tightly sealed container and freeze until ready to serve.
