  • 1 (8 oz) center-cut beef filet
  • 1 tbsp olive oil
  • 2 tbsp Dijon mustard
  • 1 cup finely chopped mushrooms (cremini or button)
  • 1 tbsp butter
  • 2 cloves garlic, minced
  • 1 tbsp fresh thyme leaves
  • 3 slices turkey
  • 1 sheet puff pastry
  • 1 egg yolk (for egg wash)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Season the beef filet with salt and pepper. Sear in olive oil for 1–2 minutes on each side until browned. Remove from heat and brush with Dijon mustard.
  3. In a separate pan, melt butter and sauté garlic and thyme until fragrant. Add chopped mushrooms and cook until dry. Let cool.
  4. Layer turkey slices on plastic wrap, spread mushroom mixture over them, place the beef on top, and roll tightly using the wrap. Chill for 15 minutes.
  5. Roll out puff pastry and wrap it around the beef roll, sealing edges with egg wash. Brush top with additional egg yolk.
  6. Bake for 15–20 minutes until golden brown. Allow to rest for 5 minutes before slicing.
