  • 2/3 cup applesauce
  • 2 eggs
  • 1 cup white sugar
  • 2 tsp vanilla extract
  • 1 cup almond flour
  • 1 1/4 cup oat flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 2 tbsp salted butter (for cinnamon sugar swirl)
  • 1 tbsp oat flour (for cinnamon sugar swirl)
  • 2 tbsp white sugar (for cinnamon sugar swirl)
  • 1/2 tbsp cinnamon (for cinnamon sugar swirl)
  • 1/4 cup salted butter (for crumble topping)
  • 1/4 cup light brown sugar (for crumble topping)
  • 1/4 cup almond flour (for crumble topping)
  • 1/2 cup oat flour (for crumble topping)
  • 2 tsp cinnamon (for crumble topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix softened butter, applesauce, eggs, sugar, and vanilla until smooth. Gradually add almond flour, oat flour, baking powder, and salt; stir until well combined.
  3. In a separate bowl, combine melted butter with oat flour, sugar, and cinnamon for the swirl.
  4. For the crumble topping: mix brown sugar with almond flour, oat flour, cinnamon, and room temperature butter until crumbly.
  5. Grease an 8×8 dish; layer half of the batter followed by half of the cinnamon mixture. Repeat layers.
  6. Bake for about 25 minutes; add crumble topping and bake for another 18 minutes until golden brown.
  7. Cool completely before slicing.
