  • 1 head cauliflower, cut into florets
  • 3 large carrots, cut into round pieces
  • 4 Tbsp extra virgin olive oil, divided
  • ½ tsp garlic powder, divided
  • 1 ½ tsp oregano, divided
  • 1 ½ tsp paprika, divided
  • 1 ½ tsp ground cumin, divided
  • 1 tsp salt, divided
  • ¼ tsp ground black pepper, divided
  • ¾ large lemon, juiced (about 6 Tbsp)
  • 1 can chickpeas, rinsed and drained (15.5 oz-16 oz)
  • 1 sweet potato, diced
  • 1 cup Greek yogurt or plant-based yogurt
  • ¼ cup tahini
  • 1 clove garlic

Instructions

  1. Preheat oven to 425°F (220°C). Chop cauliflower and carrots into bite-sized pieces.
  2. On a lined baking sheet, toss vegetables with 2 Tbsp olive oil, ¼ tsp garlic powder, 1 tsp oregano, 1 tsp paprika, 1 tsp ground cumin, ½ tsp salt, and ¼ tsp black pepper; roast for 25-30 minutes until golden.
  3. On another baking sheet, combine chickpeas and diced sweet potato with 2 Tbsp olive oil and seasonings; roast for 20-28 minutes until crispy.
  4. For the tahini yogurt sauce, blend tahini, yogurt, lemon juice, garlic, cumin, and salt until smooth.
  5. Assemble your bowl by layering greens, roasted veggies, chickpeas, and finishing with tahini sauce.
