  • 1 1/3 cups all-purpose flour
  • 1 1/2 teaspoon ginger powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/8 teaspoon ground cloves
  • 1/2 cup unsalted butter
  • 3/4 cup brown sugar
  • 3 tablespoons molasses
  • 1 large egg
  • 1 cup rolled oats
  • 4 ounces cream cheese
  • 1 1/22 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 tablespoon whipping cream

Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, mix flour, spices, baking soda, and salt. In another bowl, beat butter with both sugars until fluffy. Add molasses and egg; then gradually mix in dry ingredients followed by oats.
  2. Drop rounded tablespoons of dough onto lined baking sheets about two inches apart. Bake for around 9 minutes until set but soft.
  3. For the frosting, beat softened butter and cream cheese until smooth; gradually add powdered sugar to desired sweetness and mix in vanilla and salt.
  4. Once cookies cool, spread frosting on one cookie and top with another to create a sandwich.
