  • 1.1 pounds shrimp (peeled and deveined)
  • 1 can (14 oz) unsweetened coconut milk
  • 4 garlic cloves (minced)
  • 2 tbsp lime juice
  • 1 yellow onion (diced)
  • 1 tbsp olive oil
  • 2 tsp cornstarch
  • 2 tbsp honey
  • Fresh cilantro and chili flakes for garnish

Instructions

  1. In a bowl, season shrimp with salt, pepper, paprika, and garlic powder.
  2. Heat olive oil and butter in a skillet over high heat. Sear shrimp for about 1 minute on each side until pink; remove and set aside.
  3. Lower heat; sauté minced garlic and diced onion until soft. Add most of the coconut milk while mixing the remaining with cornstarch before returning it to the skillet.
  4. Stir in fish sauce, honey, and lime juice; simmer for two minutes.
  5. Add back the shrimp and chopped cilantro; simmer for another minute.
  6. Serve topped with additional cilantro and chili flakes.
