  • 1.2 kg Sweet Potatoes
  • 6 tbsp Unsalted Butter, melted
  • 3 large cloves Garlic, finely grated
  • 1 tbsp Fresh Rosemary, finely diced
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 45g Parmesan cheese (or dairy-free alternative)

Instructions

  1. Preheat your oven to 180C/350F.
  2. Peel sweet potatoes and slice into uniform rounds about 3mm thick.
  3. In a large bowl, mix melted butter with garlic, rosemary, salt, and pepper. Coat potato slices in this mixture.
  4. Brush a muffin tray with melted butter and layer the potato slices with parmesan in each cup.
  5. Cover with foil and bake for 35 minutes. Remove foil and increase temperature to 200C/400F for an additional 15 minutes until lightly charred.
  6. Let cool slightly before serving; drizzle any leftover butter over the stacks.
