  • 1 pound wild-caught large shrimp (peeled and deveined)
  • 4 tablespoons extra virgin olive oil
  • 4 cloves garlic (minced)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon red pepper flakes
  • 4 tablespoons butter
  • 1/3 cup white grape juice or chicken stock
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon minced parsley

Instructions

  1. Thaw shrimp in cool water, then peel and devein. Rinse well and place in a bowl.
  2. Marinate shrimp with 2 tablespoons olive oil, half the garlic, salt, and red pepper flakes for 20 minutes.
  3. In a skillet over medium heat, warm remaining olive oil. Cook shrimp for about 1 to 1½ minutes per side until opaque, then transfer to a plate.
  4. In the same skillet, melt butter and sauté the remaining garlic until fragrant. Add grape juice or broth and lemon juice; simmer for about 5 minutes.
  5. Return shrimp to the skillet with accumulated juices, add another tablespoon of butter, adjust seasoning if needed, garnish with parsley, then serve.
