  • 4 boneless skinless salmon fillets
  • 1/4 cup plain flour
  • 1 tsp garlic powder
  • 1 tsp salt (plus more to taste)
  • 1/2 tsp black pepper (plus more to taste)
  • 1/2 tbsp olive oil
  • 6 tbsp unsalted butter (divided)
  • 2 cloves garlic (finely diced)
  • 1/2 cup vegetable stock
  • 1 tbsp fresh parsley (finely diced)
  • 1 lemon (cut into wedges)

Instructions

  1. In a shallow dish, combine flour, garlic powder, salt, and black pepper. Coat each salmon fillet evenly with the mixture.
  2. Heat olive oil in a large non-stick pan over medium-high heat. Add the salmon fillets and cook for about 3 minutes on one side until golden brown. Carefully flip and cook for another 2 minutes. Add a tablespoon of butter to the pan and baste the fillets until nearly cooked through.
  3. Lower the heat and add finely diced garlic to the pan. Sauté until light golden and aromatic, then pour in vegetable stock while scraping flavorful bits from the bottom of the pan. Whisk in remaining butter until well combined.
  4. Let the sauce simmer briefly to thicken before returning salmon to the pan, basting with sauce until warmed through. Finish with a squeeze of lemon juice before serving.
