  • Pâte Sucrée dough
  • 2 cups fresh strawberries, chopped
  • 1 tablespoon granulated sugar
  • 1 (14 oz) can sweetened condensed milk
  • 1 cup whole milk
  • 1 cup heavy cream
  • 2 egg yolks
  • 1/4 cup cornstarch
  • 1 teaspoon vanilla extract
  • 6 fresh strawberries, halved

Instructions

  1. Prepare the Pâte Sucrée dough and cut into 12 portions. Press into tartlet pans and freeze for 15-30 minutes.
  2. Preheat the oven to 375°F and bake the frozen shells until golden brown.
  3. For the strawberry jam, heat chopped strawberries with sugar in a saucepan until thickened.
  4. Make the pastry cream by combining sweetened condensed milk, whole milk, and heavy cream in a saucepan; temper egg yolks before mixing.
  5. Once cooled, assemble by spreading strawberry jam in each shell followed by piping pastry cream on top and garnishing with halved strawberries.
