  • 1 pound beef short ribs
  • 4 large onions, thinly sliced
  • 4 cloves garlic, minced
  • 6 cups beef broth
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon fresh thyme (or 1/2 teaspoon dried thyme)
  • Salt and pepper to taste
  • 4 slices French bread
  • 1 cup shredded Swiss or Gruyère cheese

Instructions

  1. Heat olive oil in a large pot over medium heat. Sear seasoned beef short ribs until browned on all sides (approximately 4–5 minutes per side). Remove from pot.
  2. Add sliced onions to the same pot and cook slowly until caramelized (15–20 minutes), stirring occasionally.
  3. Stir in minced garlic and cook for another minute.
  4. Return seared ribs to the pot. Add beef broth, balsamic vinegar, thyme, bay leaf, salt, and pepper. Bring to a boil then reduce heat and simmer for 1.5 to 2 hours until beef is tender.
  5. Preheat oven broiler. Toast slices of French bread on a baking sheet until lightly golden.
  6. Shred the beef into pieces and return it to the soup mixture.
  7. Serve in oven-safe bowls topped with toasted bread and cheese; broil for 2–3 minutes until bubbly.
