  • 2 tablespoons avocado or olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 2 cups cooked chicken, shredded
  • 1 can (4 oz) diced green chiles
  • Sea salt and black pepper to taste
  • 15 ounces red enchilada sauce (Siete Foods)
  • 810 Siete Foods cassava flour tortillas
  • 1 1/2 cups non-dairy cheddar cheese shreds

Instructions

  1. Heat oil in a skillet over medium heat and sauté onion until translucent.
  2. Add garlic and red bell pepper; cook for 3-4 minutes until softened.
  3. Stir in shredded chicken and diced green chiles; season with salt and pepper. Cook for about 5 minutes.
  4. Preheat oven to 350°F (175°C). Spread some enchilada sauce on the bottom of a baking dish.
  5. Fill each tortilla with the chicken mixture and sprinkle with non-dairy cheese before rolling tightly. Place seam-side down in the dish.
  6. Pour remaining enchilada sauce over rolled tortillas and top with more cheese if desired. Cover with foil and bake for about 20 minutes, removing foil during the last few minutes to melt cheese.
  7. Garnish with cilantro or avocado slices before serving.
