  • ½ cup black or Castelvetrano olives, halved

  • 1½ pounds white fish (e.g., cod or tilapia)
  • ¾ teaspoon sea salt

Instructions

  1. Preheat your oven to 400°F.
  2. In a large ovenproof skillet over medium heat, melt the butter. Add garlic and anchovies; sauté until fragrant (about 2 minutes).
  3. Stir in the grape juice and let it reduce for about 4 minutes.
  4. Add crushed tomatoes, oregano, and thyme; simmer for 10 minutes until thickened. Mix in olives and capers.
  5. Season the fish with sea salt and place it in the sauce.
  6. Transfer the skillet to the oven and bake for about 8-10 minutes until the fish is opaque and flakes easily with a fork.
