  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon cayenne pepper (more if you want it spicier)
  • 2 tablespoons fresh chopped cilantro
  • 1/4 cup diced red onion
  • 1/2 cup diced cherry tomatoes
  • 1 jalapeno (sliced, optional)
  • 1 large avocado (sliced)
  • 15 oz can fire-roasted corn (drained)
  • Fresh cilantro for garnish

Instructions

  1. Marinate the shrimp by combining olive oil, lime juice, spices, and chopped cilantro in a medium bowl. Add the shrimp and coat well; let chill in the fridge for about 15 minutes.
  2. Cook rice according to package instructions. Fluff with a fork when done.
  3. Heat a skillet over medium-high heat and add the marinated shrimp; cook for 2-3 minutes on each side until pink and opaque.
  4. Assemble bowls by adding rice as a base and topping with cooked shrimp, diced veggies, avocado slices, corn, and additional cilantro. Drizzle with your choice of dressing.
