  • 1 yellow onion, diced
  • 2 cloves garlic, minced
  • 3 tsp cumin
  • 1 tsp oregano
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tsp chili powder
  • 1/4 tsp cayenne
  • 2 cans white beans, drained and rinsed
  • 2 lbs chicken breasts, raw (~3 large breasts)
  • 4 cups chicken broth
  • 2 4oz cans green chiles
  • 1 can fire roasted tomatoes
  • 1 can corn, drained and rinsed
  • 1 lime, juiced
  • 1/2 cup Greek yogurt (I used 2%)
  • Cilantro (for garnish)
  • Cheddar cheese (for garnish)
  • Jalapeno (for garnish)
  • Lime wedges (for serving)
  • Tortilla chips (for serving)

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté diced onion until soft (about 5 minutes), then add minced garlic and spices; cook for another minute.
  2. Mash one cup of the white beans in a separate bowl until smooth.
  3. Combine chicken broth, both mashed and whole beans, green chiles, fire-roasted tomatoes, and corn into the pot with sautéed onions. Add raw chicken breasts.
  4. Bring to a boil, then reduce heat to simmer for 15-20 minutes until chicken is cooked through.
  5. Remove chicken, shred it using two forks, then return it to the pot along with lime juice and Greek yogurt.
  6. Stir well before serving; garnish with your favorite toppings.
