  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp dried cilantro

  • 1 tbsp minced garlic
  • 16 small flour tortillas
  • 1 can refried beans
  • Taco sauce
  • 2 cups shredded Colby Jack cheese
  • Diced tomatoes
  • Chopped green onions
  • Vegetable oil

Instructions

  1. In a skillet over medium-high heat, brown 1 lb ground beef along with 1 chopped onion until cooked through. Drain excess grease.
  2. Season the mixture with 1/2 tsp salt, 1/2 tsp pepper, 2 tsp chili powder, 1 tsp cumin, 1 tsp dried cilantro, 1/4 tsp cayenne, and 1 tbsp minced garlic. Stir well to combine.
  3. Lightly fry 16 small flour tortillas in vegetable oil until golden brown on both sides.
  4. Assemble by spreading refried beans on each tortilla, adding the seasoned beef mixture, topping with shredded cheese, then placing another tortilla on top.
  5. Drizzle taco sauce over the top and sprinkle more cheese before baking at 400°F for about 10 minutes until heated through and cheese is bubbly.
