  • ¼ cup powdered sugar
  • 1 cup flour
  • 2 large eggs
  • 1 cup granulated sugar
  • ½ teaspoon baking powder
  • 3 tablespoons lemon juice
  • Zest of ½1 lemon (½1 tablespoon)
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (180°C) and prepare an 8×8 inch square baking pan by greasing and flouring it or lining it with parchment paper.
  2. In a mixing bowl, combine the softened butter, powdered sugar, flour, and salt until crumbly. Press this mixture into the bottom of the prepared pan.
  3. Bake the shortbread base for about 15 minutes until lightly golden around the edges.
  4. While the base bakes, whisk together eggs, granulated sugar, baking powder, lemon juice, zest, and a pinch of salt until smooth.
  5. Pour the lemon filling over the baked shortbread base and return to the oven for another 25-30 minutes until set.
