  • 2 cups uncooked orzo
  • 1 red bell pepper, chopped
  • 1 English cucumber, chopped
  • ½ red onion, small diced
  • 6 oz crumbled feta cheese
  • Juice and zest of 1 lemon
  • ½ cup extra virgin olive oil
  • 23 garlic cloves, minced
  • ¼ cup fresh parsley, chopped
  • ¼ cup fresh basil, chopped

Instructions

  1. Cook the orzo according to package instructions until al dente. Drain and rinse under cold water.
  2. In a large bowl, combine the cooled orzo, red bell pepper, cucumber, red onion, garlic, parsley, basil, olive oil, lemon juice and zest. Toss gently.
  3. Fold in the crumbled feta cheese.
  4. Chill in the refrigerator for at least 30 minutes before serving.
