  • 500 grams white bread flour (or unbleached white flour)
  • 8 grams salt
  • 50 grams sourdough starter (fed and bubbly)
  • 375 grams water
  • 50 grams brown sugar
  • 120 grams chocolate chips (adjust to taste)

Instructions

  1. Feed your sourdough starter about 4–8 hours before baking.
  2. In a bowl, whisk together the flour, cocoa powder, and salt.
  3. Create a well in the center; add sourdough starter, water, and brown sugar. Mix until combined and shape into a ball.
  4. Let the dough rest for one hour.
  5. Gently fold in chocolate chips and perform stretch and folds every 30 minutes for an hour.
  6. Cover and let the dough ferment overnight until doubled in size (7–12 hours).
  7. Shape the dough into a ball and refrigerate for 1–3 hours.
  8. Preheat oven to 425°F (220°C). Score the top of the dough and bake in a Dutch oven for about 45–50 minutes until golden brown.
  9. Cool for at least one hour before slicing.
