  • 4 potatoes
  • 1 onion, finely chopped
  • 3 garlic cloves, crushed
  • 1 cup chicken stock
  • 1 cup cream
  • 3 tsp Dijon mustard
  • Olive oil
  • Salt
  • Pepper
  • Oregano

Instructions

  1. Preheat your oven to 200°C (390°F).
  2. Peel and chop the potatoes into cubes. Toss with olive oil, salt, and pepper on a large sheet pan.
  3. Roast the potatoes for about 30 minutes until golden brown.
  4. Flatten chicken breasts between parchment paper using a meat mallet; season with olive oil, salt, pepper, and oregano.
  5. Sear chicken in a large deep pan over medium-high heat for about 2-3 minutes per side until golden.
  6. Sauté onion and garlic in the same pan, add chicken stock, simmer for a few minutes before mixing in cream and Dijon mustard.
  7. Return chicken to the sauce and cook for an additional 5 minutes.
  8. Serve hot with roasted potatoes.
