  • 8.8 oz package of Lotus Biscoff Cookies
  • 6 oz cream cheese, softened
  • 10 oz Ghirardelli white chocolate melting wafers

Instructions

  1. Line a baking sheet with parchment paper.
  2. In a food processor, pulse the Lotus Biscoff cookies until they turn into fine crumbs.
  3. Set aside 1 tablespoon of cookie crumbs. Combine the remaining crumbs with softened cream cheese in the food processor and pulse until smooth.
  4. Roll small portions of the mixture into balls and place on the prepared baking sheet. Chill for 30 minutes.
  5. Melt white chocolate in intervals in the microwave until smooth.
  6. Dip each chilled truffle into melted chocolate, allowing excess to drip off, then return to the baking sheet and sprinkle with reserved cookie crumbs.
  7. Allow to set completely before serving.
