  • 250 g mascarpone
  • 2 eggs
  • 50 g sugar (+2 tsp)
  • 100 g ladyfinger biscuits
  • 2 tsp loose leaf Earl Grey tea
  • 160 ml water

Instructions

  1. Prepare the tea by steeping the loose leaf Earl Grey with sugar in boiling water for 20 minutes. Strain and set aside.
  2. Whip egg whites with half the sugar until stiff peaks form.
  3. Beat egg yolks with the remaining sugar until fluffy, then fold in mascarpone. Gently mix in whipped egg whites.
  4. Layer cream at the bottom of a dish, briefly dip ladyfingers in tea, and layer them over the cream. Repeat until all ingredients are used.
  5. Chill for at least 2 hours before serving, garnishing with powdered tea leaves or dried cornflower petals.
