  • 50 g brown sugar (¼ cup)
  • 50 g cocoa powder (â…“ cup + 1 tbsp)
  • 125 g active sourdough starter (½ cup)
  • 11 g salt (2 tsp)
  • 170 g chocolate chips (1 cup)

Instructions

  1. In a large bowl, combine warm water and active sourdough starter. Gradually add bread flour, cocoa powder, brown sugar, and salt; mix until a shaggy dough forms.
  2. Knead the dough on a floured surface for about 10 minutes until smooth and elastic. Alternatively, use a stand mixer with a dough hook.
  3. Place kneaded dough in a greased bowl, cover, and let rise in a warm spot for 1-2 hours or until doubled in size.
  4. Gently deflate the dough; fold in chocolate chips without overworking it.
  5. Shape into a loaf or round shape and place in a greased pan or on parchment paper. Cover and let rise for another hour.
