  • 2 pounds shrimp (peeled and deveined)
  • 1 English cucumber (small diced)
  • 3 green onions (thinly sliced)
  • ⅓ cup mayonnaise
  • ⅓ cup sour cream
  • 1 large lime (zested and juiced)
  • 2 tablespoons chopped fresh dill
  • 1 tablespoon Dijon mustard
  • 1 garlic clove (minced)
  • ¼ teaspoon kosher salt

Instructions

  1. Prepare the dressing by mixing mayonnaise, sour cream, lime zest and juice, dill, Dijon mustard, minced garlic, salt, and pepper in a bowl. Chill in the fridge.
  2. Boil water in a pot and cook shrimp for about 2 to 3 minutes until pink. Avoid overcooking.
  3. Create an ice water bath. Transfer cooked shrimp into the bath to stop cooking.
  4. Chop cooled shrimp into bite-sized pieces. In a mixing bowl, combine shrimp with diced cucumber, green onions, and chilled dressing. Stir gently until well coated.
