  • 23 boneless, skinless chicken breasts or thighs
  • 4 cups low-sodium chicken broth
  • 1 small yellow onion, finely chopped
  • 34 garlic cloves, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp crushed red pepper flakes (optional)
  • 1 (14.5 oz) can crushed tomatoes
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)
  • Salt and pepper to taste

Instructions

  1. Place raw chicken at the bottom of the crock pot.
  2. Add chopped onion and minced garlic.
  3. Stir in Italian seasoning and optional crushed red pepper flakes.
  4. Pour in crushed tomatoes and chicken broth.
  5. Cover and cook on low for 6–7 hours or high for 3–4 hours.
  6. Shred cooked chicken with two forks and return to the pot.
  7. Stir in heavy cream until combined.
  8. (Optional) Mix cornstarch with cold water to thicken the soup if desired.
  9. Gradually add grated Parmesan cheese until melted.
  10. Season with salt and pepper to taste, then serve hot garnished with fresh parsley.
