  • 1 lb ground beef
  • 2 cups heavy cream
  • 1 cup beef broth
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 2 tbsp tomato paste
  • 1 tsp Italian seasoning
  • ½ tsp red pepper flakes (optional)
  • Salt and black pepper, to taste
  • Fresh parsley or basil, chopped

Instructions

  1. Cook rigatoni in salted water until al dente; reserve 1 cup of pasta water before draining.
  2. In a large skillet, heat olive oil over medium heat. Sauté diced onion for 3–4 minutes until softened; add minced garlic and cook for another minute.
  3. Add ground beef to the skillet and brown thoroughly (6–8 minutes), draining excess grease.
  4. Stir in tomato paste, Italian seasoning, red pepper flakes (if using), salt, and pepper; cook for 2–3 minutes.
  5. Pour in beef broth and heavy cream; simmer for 5–7 minutes until slightly thickened.
  6. Gradually mix in Parmesan cheese until melted; add mozzarella and stir until smooth.
  7. Toss cooked rigatoni with the sauce; use reserved pasta water to adjust consistency if needed.
  8. Serve hot with fresh herbs on top.
