  • 1/3 cup all-purpose flour
  • 4 tablespoons olive oil
  • 3 cloves garlic
  • 2 cups mushrooms
  • 1/2 cup heavy cream
  • 1/2 cup chicken stock
  • 1 cup Parmesan cheese
  • 2 cups fresh spinach
  • 1 teaspoon paprika
  • 2 teaspoons dried thyme (divided)
  • 2 teaspoons dried oregano (divided)
  • 1 teaspoon sea salt (divided)
  • 1 teaspoon freshly ground pepper (divided)
  • 1 teaspoon chili flakes (plus more or less to taste)

Instructions

  1. In a bowl, mix flour, paprika, thyme, oregano, salt, and pepper. Season chicken with remaining spices.
  2. Dredge chicken in the flour mixture.
  3. Heat 2 tablespoons oil in a skillet over medium heat; sear chicken for about 3-5 minutes on each side until golden.
  4. Remove chicken and add remaining oil to the skillet. Sauté garlic, sun-dried tomatoes, olives, and mushrooms until fragrant.
  5. Stir in heavy cream and chicken stock; add Parmesan cheese and spinach.
  6. Return chicken to the skillet; simmer until cooked through (165°F internal temperature).
  7. Serve warm with your favorite sides.
