  • 2 (3-ounce) pkgs. cherry Jell-O (or raspberry/c cranberry)
  • 1 1/2 cups boiling water
  • 20 ounces crushed pineapple (with juice)
  • 1 (15-ounce) can whole cranberry sauce (or 2 cups homemade)
  • 1 cup chopped pecans (divided)
  • 3/4 cup cranberry or apple juice
  • 8 ounces cream cheese (softened)
  • 1/2 cup powdered sugar
  • 1 cup sour cream

Instructions

  1. Dissolve the cherry Jell-O in boiling water until fully dissolved.
  2. Stir in crushed pineapple with its juice and whole cranberry sauce.
  3. Mix in half of the chopped pecans.
  4. Pour into a serving dish and refrigerate for at least four hours to set.
  5. Whip together softened cream cheese, powdered sugar, and sour cream until smooth.
  6. Once set, spread the cream cheese mixture over the salad and top with remaining pecans before serving.
