  • 3 lb. beef brisket (with spice packet)
  • 2 bay leaves
  • 4 sprigs of thyme
  • 1/2 lb. baby potatoes (halved)
  • 4 medium carrots (cut into 2” pieces)
  • 1 small head green cabbage (cut into wedges)

Instructions

  1. Place the brisket in a large Dutch oven and cover with water. Add the spice packet, bay leaves, and thyme.
  2. Bring to a boil over medium-high heat, then reduce to a gentle simmer for about 3 hours and 30 minutes until the meat is tender.
  3. Add the halved baby potatoes and carrot pieces; cook for 15 minutes until fork-tender.
  4. Finally, add cabbage wedges; cook for an additional 5 minutes until just tender.
  5. Remove brisket, let rest for 10 minutes before slicing against the grain. Serve alongside vegetables.
