  • 2 eggs
  • 2 tsp vanilla extract
  • 1½ cups flour
  • 1½ cups graham cracker crumbs

  • ½ tsp baking powder
  • 8 oz softened cream cheese
  • 8 oz softened butter
  • 2½ cups powdered sugar
  • 2 tsp vanilla extract for frosting
  • 1¼ cup brown sugar for caramel sauce
  • ½ cup whipping cream for caramel sauce
  • 5 tbsp butter for caramel sauce
  • 1 tbsp vanilla extract for caramel sauce
  • ¼ tsp salt for caramel sauce

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Add eggs one at a time along with the vanilla extract.
  3. Gradually mix in flour, salt, baking powder, and baking soda until combined. Fold in crushed graham crackers.
  4. Use a cookie scoop to portion out the dough into balls and roll them in remaining crushed graham crackers before placing them on the baking sheet.
  5. Bake for about 8-10 minutes or until golden around the edges.
  6. Cool cookies before frosting with a mixture of cream cheese, butter, powdered sugar, and vanilla extract.
